Thursday = Early Workout & Easy Supper

Thursday = Third Morning Workout
So I managed to get myself up for a third morning in a row to get my workout done. It was a cardio only day. I opted for Cardio Fusion. The last time I did this workout, it felt like a disaster. I struggled to keep my heart rate up. It was just painful. This time, however, I tried to focus on the moment. I stopped myself from thinking ahead to the rest of the day. I don't know if my focus was the cause, but it was a great workout. My hear rate was back up where it typically is for that workout. Time flew by too. No clock watching, not heart rate monitor checking, not thinking about how I needed to get done so I could start getting ready for work, etc. I had planned on abs as well, but was starting to run short on time (the only downfall of morning workouts is that I do have some place to be).

Saturday I have plans of going to the track. It's an hour away, and I'll be meeting up with my mom for lunch before hand. So, I may end up having to get myself psyched up for another morning workout tomorrow and resting on Saturday. We'll see. I'm making no promises.

I will say that I am enjoying the idea of being able to just leave work and be done for the day. That being said, I have yet to go home and just sit. Maybe that's just me period. Always gotta be doing something. But, it gives me the time to do that "something" like making a nut cheeze or preparing food for another day. Or, doing yoga if I so choose.Today I opted to get the ab work done that I had intended to do this morning. I chose Cathe Friedrich's Abs Circuit - Yoga-Based Abs.

What do you do with "free" time? Is there really ever "free" time?

Pre-made = Easy Dinner
Dinner tonight was super easy and virtually mess free. I pre-made Eggplant Patties last weekend and stuck them in the freezer for lazy nights like tonight. I topped them with a vegan mozzerella, roasted red bell peppers, and baby spinach with sweet potato "fries" on the side.

Eggplant Patties
Ingredients:
2 large Japanese eggplants, small diced
1/4 red onion, chopped
1/3 cup walnuts
1 tsp ground flax seed
3 tbsp nutritional yeast flakes
2 cloves garlic, rough chop
2/3 cup spelt flour
To taste: sea salt, black pepper, red pepper, parsley, basil, oregano

Directions:
Preheat oven to 375 degrees. Microwave eggplant until soft, approximately 5-6 minutes.

Mix all ingredients except flour in a food processor until smooth. Transfer to bowl and stir in spelt flour.

Spoon onto silpat sheet or parchment lined baking sheet and bake approximately 50-60 minutes flipping once.

As a quick note, I had meant to add chickpeas or red beans to this mixture to create a firmer patty. I think that's why they took so long to cook up. 
These were really tasty and a spaghetti sauce would have been great as a topper as well.

    Your eggplant burgers look great. Even my hubby liked the look and sound of them and he isn't a huge fan of eggplant. Thanks for sharing.

    Good for you for getting up early and getting your workout out of the way. I don't know why I haven't been able to do that lately.
    I hate to see with my free time I like to watch tv, or sometimes read a book.

  7. Kristen @ Swanky Dietician I'm not sure how long the morning thing will last, but I am enjoying not feeling pressure at the end of the day to do anything specific. If I want to watch tv or read, then I can, or I can cook or whatever. I'm a huge reader. It's how I unwind for sleep every night.

    Hi The Ordinary Vegetarian ! I love eggplant and this is such an easy, different way to use them. The vegan mozz....not horrible. It's much more like a fresh buffalo mozz - or this brand was anyway.

    Alicia @ Vegan Epicurean Your hubby may like these. They don't have a super strong eggplant taste really. The Japanese eggplants tend to be a lot milder in my opinion as well.

Plantar Fasciitis Woes & Way to Go Wednesday Shout Outs

I wanted to thank everyone again for your many congratulations on completing and getting a PR at my recent half marathon. The support and words mean so much to me.

My legs feel absolutely fine after the race. I could have run yesterday if it weren't for my left foot. So right now I'm trying to heal my left foot. I mentioned that I've been having problems with plantar fasciitis in that foot and that it was the cause of much pain during the race. Since the race, I've been unable to walk on it very well. Lots of hobbling going on.

I've been icing it and trying to keep it elevated. But, I noticed that it's started to get some bruising, not horrible, but worrisome. Not sure if it's better or worse for it to be discolored vs red and swollen. However, this could be indicitive of a tear.
But, my bigger concern with the bruising is that indication that there's been bleeding. Being on Xarelto for the blood clot means my blood doesn't clot very well these days…

Pumped Up Workout
I'll readily admit that I did not want to go to the gym today. I had no real excuses to not go though. I was just feeling lazy to be honest. But, I did myself a favor and made myself go. I knew I'd regret it if I didn't go.

I think part of my reluctance stems from a bit of boredom. I've gotten into a rut again with workouts. That and sometimes I just am flat out tired of seeing the inside of that place. But, that part aside, boredom all the way. So, I decided to try to do something a little different for my biceps/triceps workout. It's nothing earth-shattering. But it's a switch up from my typical 3 different supersets done as 3 sets of 8 reps....yawn.

So, today I did 4 sets of 8 reps for two supersets then I did dropsets at the end starting with heaviest weight for 6 reps, then increasing the number of reps by 2 as I decreased the weights. I did this 4 times (6, 8, 10, 12).

Today wasn't too terrible for a Monday. Of course, I did leave a little early. That always helps huh ;-) I had another round of physical therapy today. My PT has been really researching piriformis syndrome and found an interesting article that discusses the use of McKenzie Exercises - typically used for back pain.

I have started adding in low back extensions (one of the exercises) but now have a whole new list of exercises to add into my workout rotations. But, if it helps, I'll do it. I also asked her about dry needling (thanks Sarena), which is sort of similar to acupuncture, but is more about trigger point and intramuscular stimulation.

And I'm glad I asked because the timing is uncanny. One of the doctor's in the clinic happens to be going to get certified this weekend. They both believe that I am a prime candidate for the procedure. So we'll see how that goes. Kind of scared because I hate hate hate needles.
