Crockpot Cooking Perfect When Feeling Crummy

Still Crummy While I was exhausted at the end of the day, I will say that I am so glad I took the time to do so much in the kitchen yesterday . It made dinner tonight ( Moroccan Chickpea and Tofu Stew) a snap and that came in handy as I am still feeling rather cruddy. I think part of it is feeling cruddy and part of it the meds. This is the longest I've felt this crummy in a LONG time. It sucks that Jason is sick too. I am afraid it is more of a cold that I may have passed along to him rather than just allergies as we both originally thought. I actually ended up leaving work a little after noon to come home. My job isn't one that normally allows me to work from home as I need access to the network drives. However, I often have writing projects to do. Luckily, I had a few things I could do from home. Lucky New Year's Stew, Leg Day & Christmas Decorations Down

First Stew of 2011 As promised, here are the recipes from our New Year's Dinner. Like I said yesterday, we don't normally make it a point to get in all the "lucky" dishes like black-eyed peas and cabbage. However, it was the perfect opportunity for me to use my new crockpot (correctly). I also made a Vegan Chiptole Cornbread to go along with this hearty Lucky New Year's Stew . Lucky New Year's Stew Ingredients: 1 1/2 cups black-eyed peas soaked overnight 1 yellow onion, diced 1 green bell pepper, diced 1-2 sweet potatoes, diced 32 oz no-salt vegetable broth 2 cups water 1 not-beef bouilon cube To taste: salt, pepper, chili powder, liquid smoke, red pepper, garlic, parsley, basil 1 bunch kale, roughly chopped Directions: Put all ingredients minus the kale in the crockpot and cook on low for approximately 5 hours. Black-Eyed Peas, Resolutions, and a Workout

Well, what better way to start the new year than with a good workout? I chose Shock Cardio HiiT 30/30 today. I am really loving these HIIT workouts. Awesome sweat fest. I also finally did my leg workout for the week. I used the pyramid method today. Jason and I ran several errands today as well. Container Store, Wal-Mart, Kroger, and Whole Foods. Then it was time to stop procrastinating about the Christmas decorations. To me, that has to be the worst day of the year. It's kind of depressing and then everything suddenly looks bare and stark. I know that today is a day for making resolutions, but I'm not really one for making resolutions. However, after reading a few blogs, perhaps I should just set forth little goals for myself rather than full blown resolutions.
