Fall Meals Mid-Summer

Soup and Sandwich Sunday Last night we ended up going for soup and sandwiches for dinner. My tummy was not going to handle anything very heavy. Soup just sounded right, even though it was 95+ degrees out. I opted for Butternut Squash Soup (only changes were omitting carrots and using all rice milk as I was out of stock) with Grilled BST Sandwich . Grilled BST Sandwich Ingredients:  5-6 strips tempeh bacon Whole-wheat sandwich rounds Fresh spinach Fresh basil 1 Roma tomato thinly sliced Soy Kaas Montery Jack "Cheese" (or other dairy or non-dairy cheese) Sundried Tomato & Basil Veggie Dip (could also use a mayo or hummus) Directions: Spread dip on both sandwich rounds, then layer: spinach, basil, tomatoes, tempeh, top with "cheese" and grill both sides until crisp and melty. Monday Catch Up Day

I feel like I am so far behind with my blog. My Valentine's present to Jason was to make dinner and stay off the computer. And today I've been super busy trying to run errands that I'm just now even getting to sit down and start my blog about last night's dinner and catch up on reading everyone's posts. This morning I did the warm up from Shock Cardio Athletic Step then hit the weights, and finished with Athletic Step. Today was the first workout for week 7 of the Total-Body Training rotation. I can't believe it's been 7 weeks! This one was a toughie, 3 sets of 18 reps. Yikes. Chest - Dumbbell bench press Back - Double arm rows Quads - Squats Shoulders - Lateral raises Biceps - Dumbbell Curls Triceps - Double arm kickbacks This was very tiring with the high number of reps. Teetering on Hump Day

Well, it seems that was was going on with me yesterday was that I was starting to come down with something. I think it's just allergy issues. I ended up taking Claritin D before bed. Not smart really because I didn't sleep at all. But my nose wasn't runny at least. There's always some sort of trade off right? Most of today was spent either hot or cold, achy or not. I know that those are signs of a fever, but that's often how Claritin D makes me feel too. I did end up leaving work about 45 minutes early because I was just feeling so off kilter. But, I'm not going to wallow in it. It could be a whole lot worse. Plus, too much to be thankful for, like the fact that it was sunny out today, it's getting closer to the weekend, and overall, I'm not that sick.
