Easy Run and Quesadillas with Creamy Green Chile Sauce

Sunday Dinner Other than my workout and errands yesterday, I was pretty lazy. I managed to wash one load of laundry and paint my nails at least. We watched a silly movie ( Gulliver's Travels with Jack Black) mid-afternoon, and flipped around through mindless tv shows. So when it came time to discuss dinner, I was fairly lazy on that one too. Jason had one idea, but the main ingredient was frozen. Then he mentioned a dish I haven't made in ages. Basically it's pasta with spinach as the base and a Creamy Lemon Sauce . Typically I add in another veggie like asparagus or artichokes. Last night I made the dish with spinach, artichokes and chickpeas.   It's really simple and really filling. Silken tofu makes such a fantastic "cream" sauce. Monday Run Today I packed my bag for either spin or running. I really wasn't exactly sure what I wanted to do. Cardio Tuesday Wow, Monday's are a piece of cake compared to coming back to work after an amazing 3-day weekend. I think we should have been allowed to just work a half day to sort ease back into things. Anyone else agree? Needless to day, there was most definitely no morning workout. It was about 90 degrees by 11:15, so no lunchtime run either. I ended up doing part of of Cathe's Cardio Fusion though. I wasn't super excited about a step workout, so I compromised with this one as it includes a variety of step workouts, "blasts," and boot camp style exercises. I was only able to do about 45 minutes of it though as I had to get back to work. It was hard making myself stop, because I was actually having a lot of fun and time was flying by. More Creamy Tofu I was really indecisive about dinner. I feel a bit scattered to be honest. We leave Saturday morning for the beach, and I feel like I have so much to do to get ready: running errands, packing, cleaning, using up...

Easter Sunday = Longest Run

Saturday Dinner Recap Dinner was indeed a grilled affair. We made a Grilled Tempeh and Veggie Salad . We marinated the tempeh in balsamic and port wine vinegars. Grilled up asparagus, zucchini, yellow squash, portobellos, red onions, red and green bell peppers, and new potatoes. Piled it all on top of lettuce and spinach and drizzled with a balsamic vinaigrette. Weights and Longest Run Today's workout was supposed to be upper body weights followed by plyo legs. However, Jason and I were planning on a run, so I thought it was probably wise to skip the plyo legs today. The workout was 3 sets of 8 reps as straight sets: Shoulders - Upright rows Biceps - Alternating curls Chest - Incline DB chest press Back - Pullovers Biceps - Preacher curls Triceps - Overhead extension The weather was supposed to have been sunny today, but it ended up starting off very overcast. Getting it Done on Thursday + New Recipe

Workout Honesty I'll be completely honest and admit that I totally wanted to blow off my cardio workout today. During lunch, I had set up my step and popped in the DVD. It was all ready to go. That was a good thing, because when I got home, it was either get it done, or spend the time moving everything back to storage. So, I got it done. It wasn't the best workout. I did do a lot of clock watching, but...I got it done. I did Cathe Friedrich's Hardcore Extreme - Hi/Low Premix and abs. Tasty Dinner After trying the Ziti with Sun Dried Tomato "Cream" Sauce , it made me start to think about other ways to use the basics of that sauce. There is a Paula Dean recipe that I actually tweaked to make healthier, Lemon Linguine . Her recipe calls for sour cream and Parmesan cheese. The easiest tweak was a fat-free sour cream, less cheese, and added veggies. I thought that the basics of the tofu "cream" sauce would work well with the lemon flavors of her lemon pa...
