Feeling Human on Hump Day

Well today I actually made it out of the house and to work. Still feeling a little shaky, but at least I managed real clothes, makeup, and got outside. I think that being sick is giving me a new perspective on things. I definitely appreciate food a little more right about now. I also realize that I take it for granted that I am almost always healthy and strong enough to exercise.

With that being said, after work, I decided to do Shock Cardio Step Moves. I probably should not have done anything, but after 2 days of being a blob, I really had to do something to get moving again. This is a fun workout. I've only done it once before. It's fairly low impact. While it's listed as "advanced" I'd suggest that's mostly because some of the choreography can be a little tricky. I really felt better after I did the workout. I also took some time to stretch as well. 

Easy Dinner = Pre-Made Eggplant Cannellini Burgers
I really wasn't up for making much for dinner. So I went with something quick and easy: Eggplant Cannellini Burgers with baked sweet potato "fries." I figured the patties were mild enough, and soft enough that I could handle them. Oh, and did I mention easy since they were pre-made and frozen? My freezer may be spilling over, but it's sure worth it on nights when I don't feel like making anything.

Eggplant Cannellini Burgers
Ingredients:
2 large Japanese eggplants, small diced
1/4 yellow onion, chopped
1/3 cup walnuts
1 tsp ground flax seed
1 can cannellini beans, rinsed and drained
3 tbsp nutritional yeast flakes
2 cloves garlic, rough chop
2/3 cup spelt flour
To taste: sea salt, black pepper, red pepper, parsley, basil, oregano

Directions:
Preheat oven to 375 degrees. Microwave eggplant until soft, approximately 5-6 minutes.

Mix all ingredients except flour in a food processor until smooth. Transfer to bowl and stir in spelt flour. Spoon onto silpat sheet or parchment lined baking sheet and bake approximately 50-60 minutes flipping once. 
As usual, I served these on whole-wheat buns with roasted red bell peppers and spinach. This time I used a rice cheese. I wasn't really happy with the previous vegan mozzarella. So I thought I'd try something new. This one wasn't vegan, but was lactose free. It had more the consistency of a block of mozzarella rather than buffalo mozz. This one also seemed to melt much better.

  4. I need to know the lies from the truth. I know #7 is a lie, and as far as I know, you only have the one sister. I would think that you can swim, but don't have time for the tele. Tell us more!

    I do love how you make all your recipes look so easy and fun. Inspiring! As is your back to exercise while still feeling a lil sickly. Way to go, my proxy!

Plantar Fasciitis Woes & Way to Go Wednesday Shout Outs

I wanted to thank everyone again for your many congratulations on completing and getting a PR at my recent half marathon. The support and words mean so much to me.

My legs feel absolutely fine after the race. I could have run yesterday if it weren't for my left foot. So right now I'm trying to heal my left foot. I mentioned that I've been having problems with plantar fasciitis in that foot and that it was the cause of much pain during the race. Since the race, I've been unable to walk on it very well. Lots of hobbling going on.

I've been icing it and trying to keep it elevated. But, I noticed that it's started to get some bruising, not horrible, but worrisome. Not sure if it's better or worse for it to be discolored vs red and swollen. However, this could be indicitive of a tear.
But, my bigger concern with the bruising is that indication that there's been bleeding. Being on Xarelto for the blood clot means my blood doesn't clot very well these days…

Let's Have Coffee

If you're a regular blog reader, I'm sure you've seen similar posts, scenarios if you will, about what we might chat about or what I might say if we sat down and had coffee together.

I think these can be fun. Maybe fun isn't the right word choice exactly. But maybe it is? They're transparent, showing who the blogger really is ... if they're being honest of course. It's not often you truly get to sit down with the person behind the blog.


If we were to have coffee together ...

I would first let you know that I'm not a super fan of coffee. I drink mine with hot cocoa and it's mostly out of habit rather than the need for caffeine. I could forgo it on the weekends entirely.

Since we're talking coffee, I would also let you know that I've never ordered coffee from Starbucks and only once from a true coffee shop. I've only been into 2 Starbucks shops - the original in Seattle and one in town where I ordered a bottle of tea when meeting a friend. …

Jewelry and Overcoming the Fear of Failure

I guess I can blame this little hobby on Pinterest - jewelry making. More specifically, metal-stamped jewelry. Wasting time, skimming through Pinterest or seeing people posting pics of metal-stamped bracelets or necklaces, I thought, "hey, surely I can do that."

So I started pinning ideas, looking up how-to videos, ordering the tools. Boxes of tools, gadgets and goods started arriving on the daily. I know my husband was really excited. Yep, I was going to do this!

I felt like the child set free in a toy store. I didn't even know where to begin exactly. But I had some ideas. Lots and lots of ideas. I'm an idea girl as you'll soon learn. I set out my tools of the trade, all neat and tidy on my kitchen table ready to begin. Luckily, my husband who sits back and watches stepped in with some ideas on ways I could practice the stamping without using the more expensive washers and bars I'd so eagerly purchased. Smart man.
