More Pineapple and Grilled Tempeh on Monday

Monday Meant Makeup
Funny thing I realized this morning as I was putting on my makeup (other than the fact that I really need to clean the toothpaste splatters off the mirror), I had not put on makeup or done my hair all weekend. Love it when that gets to happen. The only time I left the house was to go on the run and picnic on Sunday. No makeup required on that one. Don't get me wrong, I do enjoy dressing up.  Gotta show off my clothing collection somehow right? But every once in a while, it's nice to just stay home donning comfy clothes, and the natural look. 

Do you enjoy weekends when you don't have to get dressed up, fixed up, decked out?


Monday Workouts
Today was Week 2 Day 2 of my 8-week rotation. On tap was upper body only followed by plyo legs. It was the same set up as last week doing 3 sets of 8 reps only supersetting the exercises and increasing the weights from the previous week.

SS#1
Shoulders - Upright rows
Biceps - Alternating curls

SS#2
Chest - Incline DB chest press
Back - Pullovers

SS#3
Biceps - Preacher curls
Triceps - Overhead extension

I went home at lunch to do the weight workout and did not have enough time to do the plyo legs until after work. For the plyo legs, I chose Cathe's Shock Cardio HIIT Pyramid workout.

Monday Brings More Pineapple

I bought a pineapple the other day and have been wanting pineapple salsa. So tonight I did a Grilled Citrus Tempeh topped with Pineapple Salsa with Zesty Veggie Black Beans and Green Barley on the side.

Grilled Citrus Tempeh
Ingredients:
1 package tempeh
orange juice
extra-virgin olive oil
ginger, grated
garlic, minced
soy sauce
salt and pepper to taste

Directions:

Combine all ingredients except tempeh. Cut tempeh in half lengthwise then in half to make 4 "steaks". Place tempeh in shallow dish and cover with marinade. Allow to marinate at least 1 hour before grilling.

Zesty Veggie Black Beans
Ingredients:
1 can black beans, rinsed and drained
2 tbsp minced garlic
1 can no-salt diced tomatoes, drained
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/4 red onion, diced
2 green onions, diced
To taste: salt, pepper, chili powder, cumin, cilantro, lime juice

Directions:
Cook barley per package directions.

Meanwhile, saute bell peppers, onions, and garlic in small amount of olive oil in a a sauce pan. Add in the beans, tomatoes, chiles, and spices. Cook approximately 5 minutes until everything is heated through.

I served the tempeh over barley that I cooked with vegetable broth and seasoned with green onions, green chiles, salt, pepper, cumin, cilantro and lemon juice. Top off with Pineapple Salsa and side of Zesty Black Beans.
 I think one of the keys to making tempeh is a wetter sauce or marinade. Otherwise, to me, it can be fairly dry. How do you feel about tempeh?

  4. I prefer going without makeup because it feels cleaner. However it is not practical to go without it everyday, darn it. ;-)

    Tempeh is something I rarely cook. No reason why other than I don't think to buy it. I should add it to our protein rotation. Thanks for the reminder.

    I love pineapple salsa, it is one of my favorites. It is also good over lightly cooked asparagus.

  5. Alicia @ Vegan Epicurean It is such a cleaner feeling isn't it!! I've only recently started buying tempeh on a regular basis. It's one of those things that I too typically don't think to buy. But it's been great for grilling and for fajitas. Oh, I just happen to have some asparagus - great idea.

  8. Ever since I went soy free which is now soy very light, I dont do tempeh. Before that, I really didnt do much of it. So honestly yes it can be dry and with all foods like that, for me, the SAUCE makes it :)

    love the citrus action you added..and the workout info. first time ever, well the past week or two, that all this jargon on your blog and others, actually means something...and i created my own tab LOL

  12. Ha, I LOVE when I can go all comfy on the weekend, yoga pants, no makeup, hair down and loose. A nice change of pace sometimes. Totally agree! And PS. I LOVE pineapple salsa or pineapple mango salsa too. SO GOOD!

    What's funny is I'm the opposite of you with makeup. I LOVE makeup, but my workplace is very casual (most people wear shorts & flip-flops in the summer) & I don't really care to dress up/put makeup on unless I'm meeting with a client - so when the weekend rolls around, I look forward to wearing makeup! That's when I get to hang out with my friends & go fun places, so it's more fun to look nice for that stuff. :)

  14. Ok I am totally trying this marinade! Citrus and ginger sound like the perfect combination for tempeh. It's funny, I never thought about it, but my most successful tempeh endeavors have involved wetter sauces, so I totally think you are right there. I always have a package or two in (what used to be) the cheese drawer, but they so often go neglected. I hope to finally get the grill out this weekend and this will be on the menu!

    I love to get dressed up, but once in a while it is nice to have no makeup and not do my hair. Usually Wednesdays (since I am off), is my day to makeupless. Love it!

  18. Your food pics are so pretty. The actual food helps too, of course! I'm going to try that black bean recipe, I eat so many beans that it's nice to have some variety.

    Sarah @ The Ordinary Vegetarian it only recently dawned on me about the wetter sauces for tempeh. Duh. I let mine marinate for about 4 hours. It was so much less dry. I also had plenty of extra marinade to brush down the tempeh with when I flipped on the grill.

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
