Monoday: Run, HIIT, Grill

Running Into the Wind and HIIT
I was totally pooped last night. My assumption would be it was due to weight, run, and yard work. Just a guess... I was sound asleep by 8:30 last night. I did wake up twice during the night then again at 5 am. However, the thought of getting up out of that comfy bed was just downright depressing...so I didn't.

Jason and I ran at lunch today. It was definitely a harder run than yesterday. I know in part it was because I did run yesterday, but it was incredibly windy too. You know how it feels to run into the wind - like running up hill both ways. My legs were moving but I was going no where fast! I checked the weather after the run and it was 15 mph winds with 23 mph gusts. After work I also did Shock Cardio HiiT 40/20 to make up for not doing plyo legs yesterday per my new rotation. I also added in abs from Cathe's Low Impact Circuit.

Too Nice to Cook Inside
When the weather is nice at the onset of spring, it's so hard to not want to spend every moment outside for fear that the weather will suddenly turn cold and dreary again. So tonight's dinner simply had to be on the grill. I made Grilled "Kielbasa" and Veggies over Tomato Quinoa.

There's no real recipe. I had some Kielbasa Tofurky that I put on the grill along with zucchini, yellow squash, red onion, red and green bell peppers, and asparagus. Sounds very similar to my Grilled Tempeh and Veggie Salad.

For the Tomato Quinoa, I simply cooked per package directions adding in a can of no-salt diced tomatoes (drained) to the quinoa and seasoned with garlic powder, parsley, basil, oregano, salt & pepper, and a dash of red pepper flakes.
I really enjoy grilled veggies just plain, no marinade or spices. However, an option would be to marinate them in an Italian vinaigrette. I love how versatile quinoa is. Jason is still not completely sold on it, so I don't use it as often as I'd like. How do you feel about it?

  1. I love cooking outside but don't do it often. I need to make a goal of that this year.

    I adore quinoa and use it every chance I get. It is such a good source of protein.

  2. We ate outside tonight too! It was just too nice. And is there any reason you have been doing runs and Cathe workouts? I know today it was to make up for something, but I have noticed you doing them on other days. I just don't know how you can handle it! LOL

  3. Yum!! We've been grilling a bunch too-- gotta enjoy this warm weather after such a long winter!

    Ugh-- I hate running into the wind. So exhausting!

  4. Alicia @ Vegan Epicurean I sooo wish we had the funds to do more of a full outdoor kitchen. I adore cooking outside, likely because I spend almost all day every day inside.

    Tina @ Tina Bit of Faith Fun and Fitness sounded like you guys had some fantastic weather today too. When we run at lunch it's only 30 minutes so on cardio days, I like to get in 45-60 mins is why I sometimes add on a shorter Cathe workout. Probably overkill by most standards I'm sure.

    Anna @ Newlywed, Newly Veg after being cooped up with winter weather, it's hard to resist being outside at ever opportunity. Exhausting is a good word for running in the wind (not like the wind)!

  5. quinoa is ok, i just dont love grains that much. i dont go for rice, quinoa, beans, etc...i am just not into it. But give me some fresh or grilled veggies, not loaded down in junk as you so happily noted in this post :) and im very happy.

    Your dinner looks awesome - it is at the top of our to do list to get a grill. I am so excited to "cook out" this spring and summer.

    I totally agree about running in the wind. It is so windy here in Oklahoma. I actually wimped out on my run today because of the 25 mile an hour wind. I totally regretted it later...I think I might go sneak in a quick walk right now actually!

  10. Grilled veggies, plain? YES, PLEASE! I'm a girl that usually forgets to add salt to anything. I like my food good and natural. I'm high maintenance enough on other things in my life! ;0)

  11. Quinoa is one of my favorite grains. I don't think I have used any cooking appliances except for the grill since spring started. It gives veggies so much flavor and makes for an easy, quick clean up. Hope you have a good day! xoxo

  13. Nice work on your run, despite the windy conditions - as Scott would tell me, the hard runs when you're struggling to get through make you a better runner overall. Makes the "good" runs that much better. :) Dinner looks like it was delish too! I still have to try quinoa!

  17. Oh I completely feel you on the running into the wind thing. I had a long stretch of that yesterday. As if pushing a stroller while running isn't hard enough. The wind magnified that resistance by like 200%.

    I'm a huge fan of quinoa, but my husband doesn't care for it at all. He doesn't know what he's missing out on.

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
