Beach Run, Beach Bum, Beach Eggplant Lasagna

Another Run on the Beach
Hello all! Thank you again for your sweet comments. Seems I need to wear more orange! There was a time when I actually never wore yellow because I thought it clashed with my red hair. Silly me huh?! Oh, and the top came from The Limited last summer. I bet you can find it on eBay! ;-)

This morning was much of the same. Breakfast on the balcony watching the waves crash. We decided to run for 20 minutes on the beach. My tootsies have apparently toughened up over the past few days. It was a great run. I also tried out a new kickboxing workout: Amy Bento Kickbox Xtreme. I brought it by accident actually. I had put it in my Netflix queue, but thought I had changed it to a movie before we left. Anyway, Jason called me a Cathe Traitor right away LOL! I only did 3 of the combos/intervals. It's definitely different than Cathe's workouts, but it's fun and I look forward to trying it again.

More Beach Bum Time
After working out, I rewarded myself with more beach time. We pretty much spent the entire day on the beach again. The water looked great with no signs of oil. The beach was clean as well. Of course, there have been cleaning crews coming through. I will say that the beaches are very empty for this time of year. So empty that I got pictures of crabs (that normally never come up in the middle of the day) and birds just chilling next to us. Jason also got some good shots of sting rays racing by.

Cooking on the Fly
Dinner tonight was an Eggplant Lasagna. We had plenty of extra spaghetti sauce left. I used the eggplant as pasta sheets. I mixed light ricotta with fresh garlic and sundried tomatoes as one layer. The next layer was fresh spinach, then sauce, sprinkle of cheese (there is NO Daiya here) and repeat. It wasn't anything I'd planned on making here. Luckily I don't mind cooking on the fly. Sometimes the best dishes happen that way.

    That dinner looks delish!! Another fab day on the beach I see even though you *are* a Cathe traitor ;) I tried an Amy Bento before I didn't love it, glad you had a better experience...I think I'm just so used to Cathe's style, she is the best afterall!

  5. omigoodess those sting rays look intense! I went swimming with them once. Well, "swimming." I was young so I just hung on my dad's back instead.

  7. Great pictures from the beach. The crab is adorable. It looks that there were a huge number of sting rays in the water. I would have been safely on the beach, LOL.

  11. i dont know how ur able to run on the beach! i think thats fantastic. i always end up hurting my back from it. i guess that means its probably strengthening the muscles too.. maybe thats why it hurts the next day.

  13. You do look amazing in orange! I am with you on working out when I am on vacation, but sadly when we were working this past weekend, there was no time. I did make it up though. I just work it out that way. The lasagna looks delicious. I need some now...I have some daiya here waiting to get used up! Enjoy your day!

  17. How do you run on the beach? In shoes or barefoot? I got tendinitis in my achilles once from running on the beach. :(

  18. Lisa @ 110 Pounds and Counting We actually ran barefoot. It was more my toes not being tough enough rather than any stability issues. The 2nd run was much better.

Hump Day and More Pineapples

Full-Body Workout  I'll readily admit that getting up this morning was quite painful and almost didn't happen. I forced myself out of bed though not exactly excited about tackling a full-body Pyramid workout. Sort of daunting at 5 am really. I did the warm up from Shock Cardio Cardio Core Circuit (cardio only premix) then hit the weights. It was a pyramid up only so I increased my starting weight. I topped it all off with the first 2 1/2 drills from the cardio workout. I ran short on time and was basically spent. Squats into Plie Squats Step Ups (seriously hate these especially at 5:30 am) Incline Chest Flyes into Chest Press Pullovers into DB Underhand Rows Step Ups (freaking again) Static Lunges Overhead DB Press into Lateral Raises Deadlifts Kickbacks into Overhead Extensions Hammer Curls into Alternating Curls Calf Raises I am so excited to report that my new cross-trainers and running shoes arrived today. Can't wait to test both of them out. I waited way way way too

Hitting the Gym and Lazy Means Creative Tex-Mex Creation

Sunday, Gym Day Why do vacations and min-vacations go by so quickly? Just doesn't seem quite right. Anyway, we left Branson around 9:30 am to head back home. It was a pretty uneventful drive back, which is usually a good thing. We got home and unpacked, then I headed up to the gym. I started with a 10-minute treadmill run to warm up before hitting the weights for back and light legs then abs. I went with a giant set for back then supersets for legs. GS - 4x8 Underhand barbell rows Pullovers Double-arm rows SS#1 Rear-leg elevated lunges (Bulgarian Split Squats) - 3x8 Calf raises - 3x20 SS#2 - 2x8 Walking lunges Plie squats with low-end pulse Single-leg deadlifts - 2x8 I did some ab exercises, stretched, and called it quits. Lazy = Crazy Dinner I may have made it to the gym and washed a few loads of laundry, but I never made it to the grocery store - lounging in the pool trumped grocery shopping.
