Creamy Tofu on Tuesday

Cardio Tuesday
Wow, Monday's are a piece of cake compared to coming back to work after an amazing 3-day weekend. I think we should have been allowed to just work a half day to sort ease back into things. Anyone else agree?

Needless to day, there was most definitely no morning workout. It was about 90 degrees by 11:15, so no lunchtime run either. I ended up doing part of of Cathe's Cardio Fusion though. I wasn't super excited about a step workout, so I compromised with this one as it includes a variety of step workouts, "blasts," and boot camp style exercises. I was only able to do about 45 minutes of it though as I had to get back to work. It was hard making myself stop, because I was actually having a lot of fun and time was flying by.

I was really indecisive about dinner. I feel a bit scattered to be honest. We leave Saturday morning for the beach, and I feel like I have so much to do to get ready: running errands, packing, cleaning, using up fresh produce, etc. I am making list after list. Just call me The List Queen.

Jason, however, was not indecisive about dinner. He requested the Rotini with Creamy Lemon Sauce for dinner (or lemon pasta as he calls it). I had half a package of silken tofu open from the potato salad, so this worked out well. Only problem...no rotini or penne. All I had was whole-wheat angel hair past, so dinner was Angel Hair with Creamy Lemon Sauce (original recipe here).

This is really a super simple recipe. You can add in or trade out veggies easily. I think asparagus would be really great and possibly roasted red bell peppers too.

  2. I could not function without lists. They have been a part of my life for as long as I can remember.

    We are having the same weather here. I didn't hit the pavement today either. It was definitely an inside exercise day.

  4. i have such a hard time deciding on what to make or eat when i know theres so much that needs to get done and theres a lot happening. so for u to whip up such an incredible dish even tho theres a lot uve got to put together/organize- WELL DONE! i would totally add in broccoli too. but if i could have it like that id be one estatic/happy camper too :)

  10. I vote for half days after holidays too! I have to admit that I'm pretty happy it's almost Thursday. I love how long weekends make the work week fly.

I Run to Feel Alive

Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon .
