Creamy Tofu on Tuesday

Cardio Tuesday
Wow, Monday's are a piece of cake compared to coming back to work after an amazing 3-day weekend. I think we should have been allowed to just work a half day to sort ease back into things. Anyone else agree?

Needless to day, there was most definitely no morning workout. It was about 90 degrees by 11:15, so no lunchtime run either. I ended up doing part of of Cathe's Cardio Fusion though. I wasn't super excited about a step workout, so I compromised with this one as it includes a variety of step workouts, "blasts," and boot camp style exercises. I was only able to do about 45 minutes of it though as I had to get back to work. It was hard making myself stop, because I was actually having a lot of fun and time was flying by.

More Creamy Tofu
I was really indecisive about dinner. I feel a bit scattered to be honest. We leave Saturday morning for the beach, and I feel like I have so much to do to get ready: running errands, packing, cleaning, using up fresh produce, etc. I am making list after list. Just call me The List Queen.

Jason, however, was not indecisive about dinner. He requested the Rotini with Creamy Lemon Sauce for dinner (or lemon pasta as he calls it). I had half a package of silken tofu open from the potato salad, so this worked out well. Only rotini or penne. All I had was whole-wheat angel hair past, so dinner was Angel Hair with Creamy Lemon Sauce (original recipe here).

This is really a super simple recipe. You can add in or trade out veggies easily. I think asparagus would be really great and possibly roasted red bell peppers too.

  1. I love making lists. :-) Just don't make any once you GET to the beach!

    Dinner looks yummy, as always!

  2. I could not function without lists. They have been a part of my life for as long as I can remember.

We are having the same weather here. I didn't hit the pavement today either. It was definitely an inside exercise day.

    talk to you later,

  3. Asparagus would definitely be perfect in that dish! And you were smart skipping the outdoor run today. Waaay too hot!

  4. i have such a hard time deciding on what to make or eat when i know theres so much that needs to get done and theres a lot happening. so for u to whip up such an incredible dish even tho theres a lot uve got to put together/organize- WELL DONE! i would totally add in broccoli too. but if i could have it like that id be one estatic/happy camper too :)

  7. I am a crazy list maker you can find them all over my purse, house etc. Your eats look delish!

  8. Anna @ Newlywed, Newly Veg Thanks girl. Don't worry, I won't be making my crazy lists once we hit the road!

Alicia @ Vegan Epicurean I need to upgrade to a more digital/modern way of doing lists though! LOL. Thank goodness for exercise DVDs!

Megan @ The Oatmeal Diaries I think we've hit that time of year when a run it is going to have to be in the mornings. I won't complain too much though, b/c I love summer.

Kelly @ Healthy Living with Kelly Broccoli would be great or even string beans if you like those. I don't have either on hand right now though. I hate having to let the fridge go bare!

Jessica @ Living in the Kitchen, Gym and Mall LOL - I agree that creative is the name of the game! Some things we can take with us and use when we get there too at least.

Averie @ Loves Veggies and Yoga Ah but think about how much fun you're going to have once you get moved!

Erica @ Fashion Meets Food Glad I'm not the only one who has a list for a list ;-)

  9. I agree with half a day Tuesday. I got on the elevator this morning and was day dreaming about how nice it is that we have a short week and realized I didn't get off on my floor... oops.

  10. I vote for half days after holidays too! I have to admit that I'm pretty happy it's almost Thursday. I love how long weekends make the work week fly.

  11. AnonymousJune 02, 2010

i can see why your hubs suggested this! this looks so good! and i can see why you are scatterbrained-i am the same way when something is looming on the horizon :)

  12. Gelareh @ Nutritious Foodie Now that's some serious daydreaming! LOL

Erin @ The Healthy Apron Thank you!

Kalli @ Fit and Forty Something He would love to be eating cream dishes all the time, the tofu works wonders for recreating a creamy dish. Glad I'm not the only one to get super scattered when there is something big coming up.

  13. Wow! That recipe looks delicious!! This is my first time at your blog and I really like it so far, I can't wait to see more (:

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Well, it was really only a few streets over different, but still. The point is we took a different street. Sometimes that's good, sometimes not. I did realize th

Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
