Taco Thursday

Rest for the Weary
Today I have some DOMS going on from yesterday's biceps/triceps/shoulder workout. I only briefly thought about getting up for an early run, but our lows were going to be 79/80 degrees, and the humidity is extreme - makes the heat so much worse. So I didn't even bother with a run or pretending to think about a run.

I had really wanted to do back and chest today, but my arms are too sore and the workout would have suffered as a result. Believe it or not, I do know my limits. So today was a rest day. I really wish that I could have mustered the energy for a cardio only day though because this means I'll have to force my rear out of bed tomorrow morning in order to get the workout done. The dogs are getting groomed (very much overdue) in the morning so Jason will take them in, but I will have to pick them up after work.

Sometimes I think morning workouts are worse when I know they are a must. Hmmm, need to refocus how I think about them. Tomorrow I will be reminding myself that it'll be much cooler to workout early than wait until later in the day. Let's put it this way, the heat index was 109 today and the upstairs (always hotter of course) A/C cannot keep up. The thermostat was set at 75 and it's still 85 degrees. Talk about working out in a sauna.

Taco Thursday
I decided to make Taco Salad Bowls for dinner tonight. I've been seeing a few posts where people made the "bowls" with whole-wheat flour tortillas by simply baking them in a bowl shaped dish. Thought I'd give it a try. I don't even recall the last time I had a salad in a bowl like that. Jason opted for hard tacos instead.

The filling was simple: leaf lettuce, Roma tomatoes, a variety of bell peppers, jalapenos, black beans, and TVP that I spiced up (think taco seasoning). I topped mine with Daiya Cheddar "Cheese".

Had to Share
Kelsey @ Snacking Squirrel had this quote posted today. I am not a big quote person, but sometimes they do speak don't they? This is one that I thought might speak to many of you who read my blog.

“A life spent making mistakes is not only more honorable but more useful than a life spent doing nothing.” George Bernard Shaw

Do you love love love quotes or just have a few that speak to you? Feel free to share your favorite!

  1. I suppose I'm somewhere in between LOVING quotes & just having a few I really remember. I'm not someone who goes around quoting others often, but you're right that sometimes a certain thought just speaks right to you!

    That taco salad looks great!

  2. Don't beat yourself up, lady. You work hard enough and take such good care of your body that one rest day is fine!

  3. yum! that looks so good!! You know I LOVE quotes (hello quote Friday!). Here's one I love: Faith is knowing one of two things will happen: There will be something solid to stand on or you will be taught to fly.

  4. That taco bowl is brilliant! So much healthier than the deep-fried ones you see in every (American) Mexican restaurant.

  5. Then my life must be pretty freakin' honorable! UGH! Your dinner looks amazing! I had Daiya tonight too on my quinoa bake! I hope your arms feel better tomorrow. I hate it when I have to be smart about my workout! Thanks for the sweet comment on my blog. We are good, just stressed. Hopefully things will improve soon! There is always hope! Have a great night Heather...rest up!

  6. Jess @ The Domestic Vegan I very rarely remember quotes like some people do, but sometimes I read them and get that "ah ha" moment.

Krystina @ Organically Me Oh no, not really beating myself up, just wish I could take tomorrow off rather than today ;-) My body just isn't in agreement on that one.

Jolene @ To Be Determined I love that you post the weekly quotes actually. Oddly enough, yours almost always speak to me too. Go figure right? There are some that I wish I would have written down actually.

Anna @ Newlywed, Newly Veg Thank you ma'am it was quite delish!

  7. Yay for a rest day and Mexican Thursday. ;-)

I don't have any favorite quotes that come to mind. Good question though.

  8. Sarena @ The Non-Dairy Queen Oh, hope you're going to post the quinoa bake! And I hear you on the mistakes quote!!! Maybe that's why it "spoke" to me ;-)

Nice job on listening and taking today as a rest - you will feel MUCH better tomorrow after you get it done in the AM especially since it'll be cooler. Imagine - I even took today as a rest - even though Sunday of this week was my rest - so that's TWO in one week, gasp. Of course, to make up for it, I'm getting up EXTRA early tomorrow to get my weights in before spinning. I'm crazy, I realize...but then, so are you, so we're even. ;)

When I was teaching I used quotes on all of the kids quizes, so I was a quote machine! My favorite is, "A ship is safe in the harbor, but that's not what a ship is for."

I love Taco nights - I love the idea of making a taco bowl, how tasty. I am also going to attempt an AM run tomorrow - hopefully the weather is reasonable! I have plans likely right after work so I know I need to get up if I want to get it done.

  12. so proud that you listened to your body but i agree, knowing you have a workout "hanging over your head" can make it more daunting than it needs to be!

quotes..meh, not usually much of a fan. Kinda gloss over them in genearl but i like that one :)

  13. I'm a big quote fan and loving the taco bowls!

I have to be honest, i'm really bad for allowing the weather to determine whether or not I exercise which is why i HAD to join the gym. The husband goes running in all climates and I'm so impressed. I do think you're absolutely right in listening to your body :)

  14. I love quotes and I love DOMS. And I LOVE that you listen to your body and take a rest day when it's screaming at you. You're such a great example.

  15. Alicia @ Vegan Epicurean I just don't ever seem to be able to remember the quotes...ever.

Jessica @ EatDrinkBreatheSweat So does the double rest day really count since you're doubling up???? ;-) Just kidding. And yes, you're crazy and that's why I love you so!

Madeline @ Greens and Jeans I love that "a quote machine." I've never heard that particular quote before. Good one.

Sarah @ Run Sarah Hope you got the run in! Sometimes I think it's the pressure of knowing that I have to that makes it worse. Then again, sometimes it's just the whole getting up thing.

Averie @ Loves Veggies and Yoga Some just stand out to me more than others. I don't ever actively seek them out.

Sarah @ Gluten-free tries Vegan First off - thanks so much for taking the time to comment. Heading over to check out your site! My husband will run in all weather too. Me? Not so much ;-)

Joanna Sutter @ Fitness & Spice Not many people say things like, "I love DOMS." So glad I'm not the only one! And I appreciate that - I try to do right, not always perfect of course.

oooh I am a quote whore. My new favorite lately is "Keep the eatin' clean and the workouts dirty" and one that I have been living by since I started this journey 3 years ago is "The reason most people fail instead of succeed is that they trade what they want most for what they want at the moment."

    ReplyDelete
  17. Your tacos looks wonderful! I have lot of favorite quotes. One of my faves is: "You don't love someone because they are perfect you love them in spite of the fact that they are not."

  18. mmmm...taco bowls. And you made a very healthy one at that! I'm a serious quote addict so I really like that quote! I tend to gravitate toward ones that speak to something I'm going through. Your mistake quote reminded me of another:

"If I ran a school, I'd give the average grade to the ones who gave me all the right answers, for being good parrots. I'd give the top grades to those who made a lot of mistakes and told me about them, and then told me what they learned from them."--Buckminster Fuller

I teach public speaking to college freshman, and I always share this quote with them. Life is about living, experiencing, making mistakes, learning from them and growing.

I'm with ya on the rest. Today is my "rest" day. I know it is because my legs gave me a big "F-U" when I got out of bed this morning :)

  19. that is a great quote!

my favorite quote is "Whatever you focus on gets bigger".

I try to keep that in mind and focus on the positive and the things I want to succeed / excel with. :)

    Have a Fabulous weekend!

  20. Kat @ Bubble Gum Gym Kat Ah that quote would be perfect to post in a gym room! And the last one, so true.

Kelly @ Healthy Living with Kelly Thank you ma'am. Isn't that the truth about love!

Laura @ B Foxy Fitness I had to laugh at the legs give you a big FU - mine curse at me frequently ;-) Hope you enjoyed your well-deserved rest day.

Kristina @ SpaBettie That's a good habit - focusing on the positive things you want to succeed with!

  23. That taco looks soooooooo darn good!

One of my favourite quotes is:

When you come to the edge of all the light you have known, and are about to step out into the darkness, faith is knowing one of two things will happen: you will have something to stand on, or you will be taught how to fly.

  24. I also love that taco bowl salad. How fun. I have not seen those around, but I'm going to try them. (landed here from Averie's blog!)

And that is a wonderful quote! I'm really into quotes like that. They help inspire me! :)

Here's another one that I like...

Hump Day and More Pineapples

Full-Body Workout  I'll readily admit that getting up this morning was quite painful and almost didn't happen. I forced myself out of bed though not exactly excited about tackling a full-body Pyramid workout. Sort of daunting at 5 am really. I did the warm up from Shock Cardio Cardio Core Circuit (cardio only premix) then hit the weights. It was a pyramid up only so I increased my starting weight. I topped it all off with the first 2 1/2 drills from the cardio workout. I ran short on time and was basically spent. Squats into Plie Squats Step Ups (seriously hate these especially at 5:30 am) Incline Chest Flyes into Chest Press Pullovers into DB Underhand Rows Step Ups (freaking again) Static Lunges Overhead DB Press into Lateral Raises Deadlifts Kickbacks into Overhead Extensions Hammer Curls into Alternating Curls Calf Raises I am so excited to report that my new cross-trainers and running shoes arrived today. Can't wait to test both of them out. I waited way way way too

Hitting the Gym and Lazy Means Creative Tex-Mex Creation

Sunday, Gym Day Why do vacations and min-vacations go by so quickly? Just doesn't seem quite right. Anyway, we left Branson around 9:30 am to head back home. It was a pretty uneventful drive back, which is usually a good thing. We got home and unpacked, then I headed up to the gym. I started with a 10-minute treadmill run to warm up before hitting the weights for back and light legs then abs. I went with a giant set for back then supersets for legs. GS - 4x8 Underhand barbell rows Pullovers Double-arm rows SS#1 Rear-leg elevated lunges (Bulgarian Split Squats) - 3x8 Calf raises - 3x20 SS#2 - 2x8 Walking lunges Plie squats with low-end pulse Single-leg deadlifts - 2x8 I did some ab exercises, stretched, and called it quits. Lazy = Crazy Dinner I may have made it to the gym and washed a few loads of laundry, but I never made it to the grocery store - lounging in the pool trumped grocery shopping. This meant getting creative with dinner. We had another package
