Running & Grilling for Mushroom Monday

These dark, cold mornings sure make getting out of bed on Monday morning even more difficult than it already is. It was a very chilly 47 degrees for us this morning. Of course, it warmed up into the lower 80's. So hard to dress for such crazy temperature swings isn't it?

Anyway, the one good thing about it being cooler throughout the morning is that I was able to get in a run at lunch and it was still in the lower 70's. Another gorgeous day here, no clouds, crystal blue skies. The kind of day that makes getting outside for a run (or walk or ride) a must.

Technically my half marathon training schedule this week called for 3 miles today, 2 miles tomorrow then a 6-mile tempo on Wednesday. I decided to combine today and tomorrow's runs for a 5-miler today. I know that this plan was put together by the pros, but quite frankly it's just annoying to get all ready for just 2 miles. Not that there's anything wrong if that's all you run, but for me, just annoying.

I spend about as much time getting ready then cleaning up as I do actually running. So, I combined the runs. I have a feeling many of you will nod and agree you'd do the same.

Anyway, it was a great running day for me apparently. It wasn't supposed to be a speedy run I'll be honest, but my legs were itching to go and it felt great...so I went with it. I didn't really pay much attention to time until the end. I just went with it. So glad I did too. 5.3 miles with an average 8:30 pace.

Hello! Not a clue where that came from. It's been a while since I've maintained that speed. Maybe the cooler temps are helping out. Now if only I could manage to maintain that for another 8 miles I'd have a rockin' half marathon PR.

Mushroom Monday
We don't really buy and use much cheese at the house any longer. But on "splurge" is goat cheese. And you have to have it with grilled portobellos. It's sort of the law I think. Ok, maybe not, but it's a darn good combo.

I had originally suggested portobello with maybe grilled tofu, roasted red bell peppers over a salad. Jason really wanted a portobello goat cheese sandwich with roasted/grilled gold potatoes on the side. Did I mention I really wanted the salad though? I love portobello sandwiches, but hate how messy they can be. It totally pisses me off when my bread falls apart. Just sayin'.

What I ended up doing was making a sundried tomato hummus for Jason's sandwich that was also topped with roasted red bell peppers and spinach with the roasted potatoes on the side. I turned mine into a salad topping with roasted red bell peppers, a nice portion of the hummus, portobellos, and the potatoes as well.
 
 

Oh, and just for fun, I actually added in some tempeh bacon to the potatoes. Honestly, I never really had potatoes and bacon, but always see recipes that include bacon...so why the heck not give it a shot. Extra protein if nothing else right? What's also funny is that I never ever liked real bacon, but really like tempeh bacon.

I Run to Feel Alive

It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
