Biceps, Triceps and Plan B Dinner

Bis & Tris
Today I had a doctor's appointment at 1. I plan on talking about it tomorrow, but for today, I'll just stick to my regular posts. The appointment took far longer than I thought it would take, it was a good thing I had already told my boss that I probably wouldn't be back to work that afternoon.

I really needed to sort of decompress after the appointment, so I went straight to the gym to get in a pump session. Today's workout started off with my typical elliptical warmup. It did not take long to warm up either. It was 80 degrees today and the building did not have the A/C on. To say sweatfest is an understatement. I went with biceps and triceps then tacked on a high rep superset at the end (totally optional)

* I for the swing lunges with curls, I did 4 lunges to each side rather than 8. I the idea from Kristin at Stuftmama - check out her videos for examples of how to do the moves.

Kitchen Time
After the gym, I was going to go home and stretch then get cleaned up before starting dinner. But, the freaking HVAC people are STILL here. Yep, almost 3 weeks. They were upstairs, downstairs, climbing on the roof even.

So, I couldn't shower and didn't exactly feel comfortable stretching in front of complete strangers, men at that. I did at least take the time to prep dinner tomorrow. I have PT again so I'll be home later than normal. I'm planning on stir fry so I went ahead and dry-seared the tofu and started marinating it. I'm hoping that will make it even better tomorrow. I also went ahead and made the rice. I am going to really be patting myself on the back tomorrow ;-)

Originally I was going to do roasted asparagus with roasted fingerling and sweet potatoes with some homemade seitan cutlets. However, it was 80 degrees out, which makes for a hot kitchen without turning the oven on.

So, I went with a plan B. I made smashed fingerling and sweet potatoes. I sauteed the asparagus with onions, garlic, and red bell pepper. I seasoned with some lemon zest, fresh lemon juice, salt, pepper, parsley.

I made a simple lemony mustard sauce by whisking together grainy mustard, lemon juice, lemon zest, balsamic vinegar, thyme, and a splash of agave. I did heat that in a pan and let it reduce a little bit. I thought it would help the flavors meld better as well. It wasn't really coming together like I had planned, so I ended up adding in some dried mushrooms and a splash of no-salt vegetable broth.

Today was sort of one of those up-ended days. Everything took longer than expected, including dinner. But, it was funny that today, a Leap Day, we got in the movie Leap Year. It was a sign of course. So we are finishing off this crazy day watching a movie with a glass of wine.

Daily To-Enjoy List:
  • Sunshine
  • Warm temperatures
  • Prepping dinner for tomorrow
  • Good gym workout
  • Positive news

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Well, it was really only a few streets over different, but still. The point is we took a different street. Sometimes that's good, sometimes not. I did realize th

Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
