Black-Eyed Peas, Resolutions, and a Workout

Well, what better way to start the new year than with a good workout? I chose Shock Cardio HiiT 30/30 today. I am really loving these HIIT workouts. Awesome sweat fest. I also finally did my leg workout for the week. I used the pyramid method today.

Jason and I ran several errands today as well. Container Store, Wal-Mart, Kroger, and Whole Foods. Then it was time to stop procrastinating about the Christmas decorations. To me, that has to be the worst day of the year. It's kind of depressing and then everything suddenly looks bare and stark.

I know that today is a day for making resolutions, but I'm not really one for making resolutions. However, after reading a few blogs, perhaps I should just set forth little goals for myself rather than full blown resolutions. For example, Jessica at Eat Drink Breathe Sweat had two really great resolutions that I definitely need to follow myself:
  • Stop "can't waiting" life away - example, Monday morning you start wishing it was Friday already. Enjoy the day given to you. There aren't that many!
  • Stop the negative talk 

Then Allie from Live Laugh Eat, had some great, simple ones:
  • Smile
  • Compliment someone
Now, with resolution duties done, it was time for dinner. Of course we had to try to incorporate black-eyed peas and cabbage in somehow. It's the law apparently. So I made black-eyed pea patties and topped with a broccoli, carrot, and cabbage slaw with sweet potato fries on the side.

Black-Eyed Pea Patties 
Ingredients:
1 can black-eyed peas (rinsed, drained)
1 can red beans (rinsed, drained)
finely diced onion
1/4-1/2 cups rolled oats
1 tsp ground flax seed 
Spices to taste: garlic powder, salt, pepper, red pepper, chili powder, cumin, parsely

Directions:
Place ingredients in food processor and pulse (or use hand masher).

Form into patties. Spray skillet with non-stick spray and cook until browned on both sides.

Slaw
1 package broccoli, carrot, cabbage slaw.
Saute in small amount of olive oil, flavor with salt, pepper, and red wine vinegar (I used a zinfandel vinegar)


Since I had the potato "fries" in the oven, I put the patties in the oven to finish cooking through. I used whole-wheat buns, small smear of BBQ sauce and topped with the slaw.

    I will be adopting that one myself. Very true, and I have to admit I'm very guilty of that.

  2. What a great idea those black-eyed pea burgers are! I make other bean burgers but never with these and I don't know why.

    Great resolutions. Life is too short. My mottos are "live today as though it is your last" and "make certain the people you love always know it".

    I realllllly need to stop the can't waiting myself. I have just wished away my whole college experience from day 1 and I'm starting to regret it. BOO.

  4. Dani it's amazing how much time we all spend wishing it was later in the day or later in the week. I can't even begin to say how much I do this. Gotta stop!

    Alicia great mottos! I love trying different bean patty combinations. Kinda hard to go wrong really. These were really dense and didn't require any type of binder like an egg (which is a problem I'm having with lentil patties).

    Allie isn't it amazing how some of the simplest things are the hardest to follow through with?!

  6. Jessica I'm definitely going to have to be kept in check, especially with the negative thoughts. I caught myself doing that many times today (trying on clothes). Ugh. Yep, I might rethink the half marathon too! LOL

KIND Bar Review + Apple Raisin Wheat Berry Salad

Weights & Step As much as I wanted to run today, I knew there was no getting up early enough to do so. Monday's are hard enough without getting up at 5 am to run. Yawn ... So, today I did my weights at lunch then cardio after work. Weights were pull muscles (biceps and back). I did 3 sets of 8 reps of the following: Biceps : Alternating curls Cross-body curls Zottoman curls Back: Single-arm horizontal row Underhand DB rows Double arm rows It was a pretty good workout. I felt pretty strong today for some reason. Love it when that happens. My legs were pretty sore from yesterday's workout, so I opted for a lower intensity cardio: Cathe's Low Impact Circuit - Cardio Only Premix plus abs. It was a great workout and helped to loosen up my legs. KIND Review I have been very remiss with my review of the KIND bars that I won from Jill @ My So Called Health LIfe . I won the Nut Delight.
