Portobello Burritos on Monday

Well I ended up leaving work early for the doctor. Sinus infection plus checking on a burn that I inflected upon myself Dec. 23 crisping up ciabatta bread in the toaster oven. The good news is that the burn is not infected, just taking forever to heal up (yep, it was really that bad). Unfortunately I was told to keep taking Claritin D and given antibiotics. Ugh. Oh well, I suppose it could have gone much worse. He could have looked at my hand and said something like, "Holy shit!" Or, he could have told me I had bronchitis or something worse than a sinus infection. So I should count it as a good day!

I've been sitting in my sweats watching Food Network and scouring through the cookbooks I recently purchased. I am seriously overwhelmed at all the options. I have most ingredients on hand, but I keep missing one or two key flavor ingredients for some of these recipes. I had really wanted to take advantage of being home by trying something new again. How sad is it that I obsess and over-think what to make for dinner. I really do make it far more complicated than I should all in the name of trying new dishes.

I finally settled on The Urban Vegan: 250 Simple, Sumptuous Recipes from Street Cart Favorites to Haute Cuisine I picked Portobello Burritos and topped with Creamy Cilantro-Lime Sauce. Essentially the filling for the burritos is sauteed onions, bell peppers, onions, and portobellos mixed with rice (I used pearled barley) and black beans. These get baked with salsa. The "creamy" sauce is made with tofu, fresh cilantro and lime juice. It was a tasty dish. I enjoyed the flavors and it's one that would be super easy to make more or less spicy depending on your tastes. It's definitely one that I'll make again and would also be great to serve to guests (even meat-eaters).

Unfortunately, my camera messed up again and the pictures that I took were somehow erased when I put the card in the computer. This is the 2nd time this has happened and I'm not sure what the cause is. Anyone have this problem? It only deleted the photos taken tonight and no others. They were on the camera as I flipped through while taking pictures. Really annoyed and aggravated. Guess that means I'll have to make this again to show it off.

    Dang, I hate computer problems. That is the first I heard about the card eating up pictures, though. Hope it behaves next time!

  5. Hey Anna @ Newlywed, Newly Veg ! If I could just not have to take something to keep the sinuses from draining I'd be better off. Sometimes I think the meds are worse than not! Did you get this cookbook? I knew you had gotten some new ones as well.

  6. Lesley Lifting Life I too love portobellos! So easy to use. We go through a ton during the summer grilling out.

    Allie (Live Laugh Eat) not only burritos, but baked! They were really tasty with lots of flavors and textures. Could have been a mushy mess, but they weren't. Will definitely do this one again. Hopefully with pics!

  7. Hi Sophia . I am not sure what happened with the card. It didn't delete any other photos so it's not like it just got erased. Very strange. I did pull out a new card and retired the other one just to be safe! BTW - I agree that it's important to be open-minded too (referencing your recent post).

    So sorry you still aren't feeling well. Sounds like it was a good thing you went to the doctor. I agree with you that the meds can be worse than the problem they are trying to resolve.

    Technology doesn't always like me either. But I haven't had the memory card problem you are experiencing, nor have I heard of anyone else having this problem. Good idea to try a different card. I hope that fixes the problem.

  11. I really love the sound of those burritos! Great substitution of barley for the rice. I bet that sauce was a gorgeous creamy green, I really want to recreate that. Did you use silken tofu or the firm kind?

  12. Hi Alicia ! The memory card thing is just so strange. My husband sat and re-read through the camera manual just to see if he could find out anything about the potential cause. Nope, Nada.

    The Ordinary Vegetarian I use the soft silken. I halved the recipe and tried using a mini blender (more for single-serve smoothies) and had a really hard time getting it to puree. Had to add some apple cider vinegar to it. Next time I'll use my processor or large blender.

I Run to Feel Alive

It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
