Rough Start, Smooth (Sweet) Finish

Well, this morning started of snowingly... We don't get much snow here. I really didn't even expect to see any when I woke up this morning. But there it was, and a balmy 24 degrees to boot. I have a 3-block walk from my parking lot to my office so I bundled myself up and pulled on my rain boots. I have a large bag that I can shove my purse into and regular shoes once I get to the office. Upon arrival, I realized I was missing one shoe. Not the way to start a Monday morning. I had to trek back out into the snow and cold with hopes that the missing shoe was in my car and not at home or on the street. Thankfully it was in the car.

So, that was the start to my week. One of those, "should have gone back to bed and started over" kind of mornings. I suppose I need to try to put a positive spin on the incident, so I'll just think of it as bonus cardio. Thankfully the remainder of the day went much smoother. No more lost shoes is a plus in my book.

My true cardio today was a short 15-minute run then spin class with Jason. After class it was most definitely time for dinner. We were both just short of starving and needed something fast, loaded with protein, and fast (did I already say that?). So we made a Veggie Chorizo Wrap.

Veggie Chorizo Wrap
Ingredients:
1/2 link of Yves Veggie Chorizo
1/2 red onion, diced
1/2 green bell pepper, diced
minced garlic to taste
1/2 red bell pepper diced
1/4 cup frozen corn kernals
1/2 can black beans, rinsed and drained
Spices to taste: salt, black pepper, red pepper, chili powder, cumin, cilantro
Options: diced zucchini, squash, green peas, or any other veggies of your liking

Directions:
In small amount of olive oil, saute onions, bell peppers, and garlic until soft. Add the "chorizo" and sauteed until browned. Next add the corn and beans and spice to your liking.

Served in a whole-wheat wrap with shredded lettuce, tomatoes, and a drizzle of cheeseless queso.




Gotta have a sweet treat after dinner. Last night I made another batch of the Sweet Tofu Yogurt from a recipe in Oxygen Magazine. I didn't have the fresh fruit suggested other than blueberries, and the only frozen fruit I had was a pineapple, mango, strawberry mix. So, mine was a Pineapple, Mango, Strawberry & Blueberry Sweet Tofu Yogurt. Again, I added a dash of cinnamon and drizzle of agave nectar to mine. This time I used a firm silken tofu rather than extra firm. I must say that I think I prefer the extra firm. It had more of a pudding texture that I enjoyed. I also liked the berry mix I used previously. It had raspberries that added a nice tang. That's not to say that this batch was bad by any means. Trust me, I ate a small cup of it topped with Kashi GOLEAN Toasted Berry Crumble (they still don't show it on their site) without complaint.

  2. Well I'm glad your day turned around :) I'll have to try the tofu pudding recipe. I just started playing with pudding tofu in my protein shakes and I'm loving it. I've had love/hate experiences with Yves products, but that dish looks fantastic so perhaps I'll try those next.

  3. Alyson I don't typically buy a lot of their products, but there was another vegetarian chorizo that my husband always liked and we can't find anymore. So he picked this up when he saw it. I need to just make my own as it's mostly tvp (texturized vegetable protein) and spices. You can also omit the corn if you're being carb conscious, but it adds a nice sweetness and textural variance that's kind of fun. Let me know if you try it.

    You didn't have a good start to the week did you? Once I had on one black and one navy pump all day. That cured me of buying various shoes in different colors. Glad you found your shoe in the car!

    Your dinner sounds good. I love anything that can be wrapped up in a tortilla or flat bread .... which is why I can't keep them in the house.

  6. Alicia thankfully I've not gone in with mismatched shoes, but I have definitely worn navy with something that should have been black. That one is so tricky!

    My husband is the one who loves wraps. He'd put just about anything in a wrap and call it a meal.

I Run to Feel Alive

It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
