And They're Off!

After waking up an hour earlier four days in a row to get my workouts done, I found myself up early on Saturday, my rest day no less. Really not thinking that's very fair. I almost went ahead and did a short cardio just 'cause. I talked myself down though and made steel cut oats instead. I am not sure I have a super healthy day ahead of me. So I wanted to at least start off on the right foot with eats. I made Peanut Butter and Banana Steel Cut Oatmeal. I wish I would have thought to have put in some raisins to make it more like a PB&J! Oh well, sock that idea away for another day. This recipe made 2 servings.

Peanut Butter and Banana Steel Cut Oatmeal
Ingredients:
2 cups water
1/2 cup steel cut oats
Dash of salt
Healthy dash of cinnamon
Splash of vanilla
1/8 tsp (or less) stevia
1 tbsp natural creamy peanut butter per serving
1/2 banana per serving

Directions:
Combine ingredients up to stevia in sauce pan. Let simmer on low until oats are cooked. Approximately 25-30 minutes. Stir in peanut butter and bananas to serve.
For lunch we're (as in Jason and I) are meeting my mom and sister at this great little place called Cafe 1217. They have soups, sandwiches, and also a case filled with salads and entrees (like tamales and such). They rotate out the menu monthly. They'll have vegetarian items for sure, so maybe lunch won't be too terribly unhealthy. I'll also be packing some Kashi bars and maybe almonds in my purse for later snacking.

    We love peanut butter and banana oatmeal, and I haven't made it in months. Thanks so much for the reminder. I know what I am having tomorrow.

    Growing up near Chicago and now living in Baltimore I have been to my share of horse races. The Preakness is a zoo every college kid goes to in the area. Think concert but with horses. I am a little too old for it now, but I enjoyed it years ago.

  6. Hey Kris | iheartwellness.com the veggie cakes were really quite good. Slightly sweet from the sweet potato and carrots, but not overly so. I think they would be awesome with a roasted red bell pepper coulis too. We always have a good time at the races whether we go with a large group or small group, win or lose.

  8. Jessica @ eatdrinkbreathesweat I seriously almost did HiiT 40/20. I did good though and just took the day and enjoyed. It made yesterday's workout that much better I really do believe.

Plantar Fasciitis Woes & Way to Go Wednesday Shout Outs

I wanted to thank everyone again for your many congratulations on completing and getting a PR at my recent half marathon. The support and words mean so much to me.

My legs feel absolutely fine after the race. I could have run yesterday if it weren't for my left foot. So right now I'm trying to heal my left foot. I mentioned that I've been having problems with plantar fasciitis in that foot and that it was the cause of much pain during the race. Since the race, I've been unable to walk on it very well. Lots of hobbling going on.

I've been icing it and trying to keep it elevated. But, I noticed that it's started to get some bruising, not horrible, but worrisome. Not sure if it's better or worse for it to be discolored vs red and swollen. However, this could be indicitive of a tear.
But, my bigger concern with the bruising is that indication that there's been bleeding. Being on Xarelto for the blood clot means my blood doesn't clot very well these days…

Let's Have Coffee

If you're a regular blog reader, I'm sure you've seen similar posts, scenarios if you will, about what we might chat about or what I might say if we sat down and had coffee together.

I think these can be fun. Maybe fun isn't the right word choice exactly. But maybe it is? They're transparent, showing who the blogger really is ... if they're being honest of course. It's not often you truly get to sit down with the person behind the blog.


If we were to have coffee together ...

I would first let you know that I'm not a super fan of coffee. I drink mine with hot cocoa and it's mostly out of habit rather than the need for caffeine. I could forgo it on the weekends entirely.

Since we're talking coffee, I would also let you know that I've never ordered coffee from Starbucks and only once from a true coffee shop. I've only been into 2 Starbucks shops - the original in Seattle and one in town where I ordered a bottle of tea when meeting a friend. …

Jewelry and Overcoming the Fear of Failure

I guess I can blame this little hobby on Pinterest - jewelry making. More specifically, metal-stamped jewelry. Wasting time, skimming through Pinterest or seeing people posting pics of metal-stamped bracelets or necklaces, I thought, "hey, surely I can do that."

So I started pinning ideas, looking up how-to videos, ordering the tools. Boxes of tools, gadgets and goods started arriving on the daily. I know my husband was really excited. Yep, I was going to do this!

I felt like the child set free in a toy store. I didn't even know where to begin exactly. But I had some ideas. Lots and lots of ideas. I'm an idea girl as you'll soon learn. I set out my tools of the trade, all neat and tidy on my kitchen table ready to begin. Luckily, my husband who sits back and watches stepped in with some ideas on ways I could practice the stamping without using the more expensive washers and bars I'd so eagerly purchased. Smart man.
