Magnificent Monday

Lunchtime Run
Today Jason got up to go swim at 5 am. While I was awake, I opted not to do my workout. I've got some serious DOMS (delayed onset muscle soreness) going on from my workouts this weekend. My legs just felt too have and too stiff to attempt a step workout. I'm glad I didn't try to push through because we ended up going for a 30-minute run at lunch. We had perfect weather again today. It was sunny and 70 degrees. The lunchtime run was great for loosening up my legs and giving me an energy boost.

We did, however, do a trial run run with the dogs. Jason has been talking about wanting to take them running with us for ages. They can be a bit spastic though, and I am sooo afraid of getting tripped up and falling when one of them makes an emergency potty stop or stop and smell session. I am plenty klutzy on my own thank you very much. We have a route mapped out that is 1.5 miles from the start of our house back around. So we took them for a jog the first lap. They really did pretty well considering this was their first true run and not a leisurely stroll. I'm hoping they'll still be worn out tonight...who am I kidding. I know them all too well! 

I also did abs from Ab Circuits after work plus a good stretch.
 
First Grilled Dinner and Sweet Treats
Since the weather was still nice (thought rain is in the forecast over night) I decided to get out and fire up the grill for the first grilled meal of the year. I decided to do a Grilled Veggie and Tofu Salad.

Grilled Veggie and Tofu Salad
Ingredients:
1 package extra-firm tofu* (squeezed and patted dry)
2 tbsp no-sugar strawberry preserves
Extra-virgin olive oil (enough to loosen marinade, approximately 1 tbsp)
Balsamic vinegar (to taste)
Port-wine vinegar (to taste and to loosen marinade)
Fresh veggies of your choice:
1 zucchini, cut into strips
1 yellow squash, cut into strips
3 baby portobellos
1/2 green bell pepper
1 small sweet potato, cubed

* Freeze tofu for minimum three days, then thaw in refrigerator for a spongier texture that absorbs marinades more readily.

Directions:
Make marinade by mixing preserves, oil, and vinegars. Layer on tofu and let sit 4 hours or longer.

Grill all veggies to your liking. I use a small baking sheet to cook the potatoes on. Grill tofu approximately 20 minutes on each side on lower heat. I usually grill everything large and cut it down into smaller chunks for serving. I serve on a bed of red leaf lettuce and spinach with drizzle of balsamic vinaigrette and side of toasted whole-wheat bread or pita.

  1. I got a little giggle out of trying to wear out the dogs. Let us know tomorrow if it works. If it does I may have to starting running with cats since they never sleep through the night. Won't that be a sight? LOL!

  2. Alicia @ Vegan Epicurean Funny you should mention the dogs being tired. One is and one isn't. The "crazy" on is still wired for sound. I'd LOVE to see a picture of you running the cats!! Our "crazy" girl never sleeps through the night either. She apparently takes after me ;-)

  5. Yay for an outside run today!!! I bet it was AWESOME! I'm so ready for spring!! That's great you are trying to run with your dogs. Whenever I ran really long distances, I yearned for a dog to be there with me. haha Although, you did mention the tripping... And when I was little, my dog took off and I tried to hold on and he just drug me along the sidewalk. Ouch. :(

    What kind of dogs do you have??

  8. Anna @ Newlywed, Newly Veg they do make these shorter hip leashes that I think we'll look into if we keep up the running with them. It was funny, when one looked pooped, if I ran ahead, they suddenly needed to sprint again to catch me. Jason called it his interval training.

    Carrie Ouch on being dragged, that's what I'm afraid of. We have 2 Cocker Spaniels so they're just big enough to really trip you up!!! I love portobellos yum! One of the best parts of spring/summer, grilling out.

    Tess the getting up early to exercise is an ongoing battle I have with myself. I love it after I'm done b/c I'm done for the day. However, I am NOT a morning person so it pretty much sucks at first. Cardio is easier. Weights...ehhh

  15. I just found you and am enjoying all the recipes. I run with my dog all the time and thought I'd share a few trip free tips: teach "leave it!" So important to know squirrels are off limits. Keep a short leash. I wrap a thin 6 ft lead around my waist and tuck it into my waistline, or hold a 4 ft slip lead in my hand. They'll get it with practice! Looking forward to reading more!

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
