Run & HIIT Workouts and Grilled Veggie & Tofu Salad

I must say, I am a little shocked at how many of you have experienced credit or debit card fraud too. It's really scary isn't it? You just never know when it might happen. We were very lucky that our bank apparently monitors all transactions with an eagle eye. Since we have almost completely stopped using that particular card, it probably made the crazy expensive purchases stand out more too. Thank you all for your well wishes with the matter. I'm pretty sure it'll all be resolved. WIth any luck at all, the fraud department with pinpoint the super nice person (or persons) who did this.

Running & HIIT
I slept really soundly last night until about 2 am, then I was up every hour until 4:30 and crashed hard. I didn't even hear Jason leave for swim at 5 am, but I did hear my alarm at 5:26 beckoning me to get up and get my workout done. I knew I wanted to get in 30 minutes this morning, but was totally undecided on what I was going to actually do. I typically have it completely planned out with whatever equipment, attire, DVD ready to go.

It was still too dark to head out for a run, so I thought I'd at least start with the warm up from MMA Kickboxing and take it from there. After a 9-minute warm up, it was light enough to head out for a run, so that's what I did. After the rain yesterday, the humidity levels dropped and so did the temps. It was a nice, dry 74 degrees with a light breeze when I headed out at 5:50. I had a really great run. It wasn't just over the top fast (too early for that), but I averaged an 8:34 pace.

I will admit that I am starting to like my solo runs a little bit more. I am learning to pace myself better rather than relying on Jason to pace us. He has all of the fancy gadgets on his watch/shoe. I...do not. I have been trying to watch my heart rate as one gauge (though I realize that does fluctuate) as well as paying more attention to the time at certain points on my route.

After work I was planning to finish up the MMA Kickboxing workout. Instead, I decided to do Shock Cardio HIIT Pyramid and abs. I haven't done any of Cathe's HIIT workouts in a while, and my endurance has definitely gone downhill! Wow. It was a great workout, and I'm so glad I changed my mined. I also stretched really well. My legs were feeling rather tight, almost as if I'd been lifting (not made better by the HIIT workout mind you). Sometimes I forget how strenuous running truly is. I know that probably sounds silly - how can you forget something like that right?

More Grilling

Since the weather was so pleasant today, grilling was a must. We still had plenty of squash, zucchini, new potatoes, and bell peppers to use. Jason picked up some portobellos from the Argenta Market on his way home. I also marinated some tofu in the Strawberry Marinade (recipe) I made on Monday and grilled that to go on the salad.

I did find out a neat trick if you forget to put the potatoes on the grill. Yes, I totally forgot about them. Cut them up and season as you would for grilling. Microwave for approximately 5-6 minutes then put on the grill with heat on high for about 4-5 minutes until crisp. Voila, fast grilled potatoes.

  1. sounds like an awesome run and weather-wise too! Solo runs well, I guess I've only "known" them that way (unless with Jess sometimes, or a friend), but I find them better for ME because I fear being outpaced or trying to keep up (hell, I would never be able to run with you, you speed demon!! that's just so fast, my idol!). But, I'm glad you're starting to enjoy them!

  4. i really enjoy solo workouts. unless its something easy like walking that i can enjoy with someone else, i find that i cant keep my pace if someone runs beside me. its interesting how ur finding ur liking ur solo runs... i think thats normal or at least expected. interesting tho huh!

  6. HIIT workouts are great for time crunch but boy are the hard! I guess thats the point, right?
    Oh and I am always super impressed how well TOFU grills. Looks tastier than chicken! Gotta love summer grillin.

  8. I am all about grilling in the summer. It is just so easy. Everything looks great as usual!
    I hate when I wake up and am up at like every hour. So frustrating.

  9. That grilled tofu is beautiful! I have never gotten mine to char that beautifully. Clearly I'm going to have to try that marinade!

    Awesome AM workout! I also sometimes prefer running alone as I set my own pace and get a bit zoned out. Your tofu salad looks tasty, I love the addition of sweetness to it.

  12. I use that same trick to make butternut squash fries in a hurry. It really speeds up the process. I'm torn on my preference of running alone or with a pal. I guess it comes down to my mental state that day. If I have a lot going on that I need to sort out, I definitely go solo.

  13. Kelsey @ Snacking Squirrel I almost always workout solo. I have enjoyed running with my husband though as it's time spent together. Huffing and puffing through conversations about pretty much nothing. It's good for me to get used to running alone though I think.

    Lindsay @ Cotter Crunch I love HIIT workouts and had to sort of scale back there for a while LOL. I think they can be addicting b/c of their efficiency. I think even people who think they don't like tofu would like it grilled.

  16. Um, first of all - I saw your comment to Jo, you are a REAL runner, no two ways about it. So get over that ;) And, you ARE fast, with or without Jason clearly! Nice work on that run! I hear you on your legs feeling tight - mine are always tight after running, especially since I've been running a lot more lately. Crazy how strenuous it is on the whole body huh? From abs all the way down to the toes.

Kenzie @ A Healthy Purpose Hey girl - I actually read something the other day that there are some vegetables that are better microwaved than any other cooking method (in terms of preserving the nutrients). I found that really interesting. I love HIIT workouts. The one I did was plyo-based. But HIIT runs are awesome for increasing speed!

    wowza that tofu really looks awesome. I have been on such a tofu kick lately, but I guess I do that with a lot of things. You know eat them like every day for a week and then store it away for a month (I think that made sense, ha)

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
