Happy 4th and Party Recap

Party Recap
So the morning started off cloudy with a heavy rain shower that promptly created a sauna effect. But, the sun came out and the covers came off the lounge chairs. I must say, that everything turned out very nicely. The pool wasn't bath-water warm since we had the cool down over the past week. Our friends' daughter thoroughly enjoyed commanding Jason to spin her around and around and...around. Water was flying everywhere. Here are just a few pictures. I sort of fell down on the job and didn't get pictures of everyone.

I think the food spread was pretty darn tasty if I must brag on myself. Everyone enjoyed the Lentil & Qunioa Sliders. The Apple Pie Cookies are all gone, most of the fruits and veggies disappeared. There were no complaints of a lack of meat. In fact, most everything I served was vegan minus the cheese dip. I ended up throwing together a last-minute Sundried Tomato & Basil Veggie Dip. Do you ever decide last minute to make something just before a party?


Sundried Tomato & Basil Veggie Dip
Ingredients:
1 package firm silken tofu
5-6 sundried tomatoes, re-hydrated, rough chop
2 cloves garlic, rough chop
Fresh basil (to taste, handful approximately)
1 tbsp nutritional yeast flakes
To taste: salt, pepper, balsamic vinegar

Directions:
In food processor, puree all ingredients until smooth. Re-season if needed.

Oh, and the Red, White, and Blue Sangria was also a huge hit as well. In fact, Jason ended up having to make more.

Sunday
This morning I got up far too early. I really had expected to sleep in a bit. But, I was half listening for my sister to get up. She typically wakes up early and heads out. I didn't want to miss her leaving, so I was awake and waiting. Oddly, she slept in though. Go figure. It game me some time to try to catch up on blogs and get the recap done though and ease into the day.

Today I did legs followed by MMA Kickboxing (2 combos and intervals as I was running short on time). I did all but the last 3 exercises as supersets of 3 sets of 8 reps. The last 3 were done as straight sets of 2 sets of 8 reps.

Alternating plie squats

Alternating lunges
Calf raises

SS#3
Step ups
Dead lifts

Squats with low-end pulse
Static lunges with low-end pulse
Single leg deadlifts

I had a pretty good workout and ended with a nice stretch.

My mom and her new boyfriend (?) came up for lunch. It was the first time I met him. I reused the Black Bean & Corn Salsa for burritos and tacos. We had a really nice visit. After they left, I hit the patio for some reading/lounging time. That's pretty much where I spent the last part of the day.

As of right now, dinner is completely undecided. I'll have to let you know what we end up doing for dinner tomorrow. I hope everyone is having a happy and safe 4th of July!

  1. What a great get together, yesterday and today! I love lentil quinoa burgers! I enjoyed some lentil bulgur burgers tonight! I always decide last minute to throw something else together. I always feel like I need more out there! Your food looks delicious, as always Heather! Enjoy your evening!

  3. I am so glad everyone had a great time. Heath is precious! Darn I really need to get that MMA kickboxing workout, LOL.

    Of course I make things at the last minute for gatherings. Why? I guess I think there isn't quite enough food. Go figure, LOL.

    Alicia @ Vegan Epicurean I think you'd really like the boxing and kickboxing workouts. Lots of fun. I had a sneaking suspicion you'd do the last-minute recipes too. I always over do the amount of food! I do believe it's an Italian thing ;-)

  9. i always begged my parents to get me a pool in the backyard.. lol my neighbors have one but they have younger kids..so it would be weird to ask them to jump in altho ive contemplated sneaking over the fence.. :P

    heather the food looks fabulous-especially the sangria! and you and your friend look so fit and healthy-WOW! does it feel like sometimes taking pics is just work? i too fell off the pic wagon last night and just did not WANT to take anymore pics. hope you are having a relaxing day today!

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Well, it was really only a few streets over different, but still. The point is we took a different street. Sometimes that's good, sometimes not. I did realize th

Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
