Party Prepping - Apple Pie Cookies

I must apologize for not having the time today to individually reply to your comments from yesterday's post. I did read each of them (more than once) and appreciate that you took the time to reply so thoughtfully - especially in regards to my running ramble. So apparently I did actually make some sort of sense ;-) I was surprised that more of you don't consider yourselves to be runners though. I think it's such an interesting idea - how we define ourselves and why.

Oh, and thank you all so much for your fun facts. I feel so much more normal - love you all! You're great! I found out how similar we all possibly are in terms of quirks. My pal Averie did a similar post and I found out (after posting on her blog) that we both curse like sailors ;-0 It's so much fun learning about each other I think. I do hope you enjoy the fun facts and aren't terribly bored with them yet.

Busy Bee: Workouts & Food Prep
This morning I was up before 7 am. I pretty much hit the ground running. I had a lot left to do before the party like assembling the Black Bean & Corn Salsa, the Sangria, cutting up fruits and veggies, and finishing up last minute chores. I did, of course, squeeze in my workouts for the day.

I decided to do more of a push/pull rather than push vs pull today. So I worked biceps, triceps, and shoulders. I love working shoulders, but they never seem to neatly fit in with push/pull. I decided to do the workout as a tri set for efficiency purposes. Don't know about you, but they seem to go faster for me. I did each set 3 times and exercises 8 reps.

Alternating bicep curls
Overhead triceps extension
Shoulder press

TS#2
Hammer curls
Kickbacks
Lateral raises

TS#3
Incline curls
Lying dumbbell triceps extension 
Rear delt flyes

I also did some stability ball abs then Cathe's MMA Boxing to round out upper body.

Another Recipe
Last night we did indeed have pizza. I wasn't sure if that's what we were really going to have. But, when I asked Jason what he wanted, he said, "Well, it is Pizza Friday." I also made some cookies for the party. I wanted something that was "American," so I found a recipe for Apple Pie Cookies at RecipeZaar. I was meaning to following the recipe this time, especially for baking. However, I realized that I did not. Go figure. They still turned out very good, but I imagine they would have been better had I used the right amount of applesauce. Which brings me to the point that I ended up having to make my own applesauce because we were out. Here is what I made, it was enough for about 3/4 cup (which is what the recipe had called for and I did not use all of)

Homemade Applesauce
Ingredients:
1 Granny Smith apple (next time I'll peel), diced
Water
Cinnamon
NuNatural Liquid Vanilla Stevia

Directions:
In medium sauce pan, bring water and apples to a boil, let simmer until soft. Add in cinnamon and liquid vanilla stevia to taste then mash.

Apple Pie Cookies
Ingredients:
1 cup rolled oats
3/4 cup whole-wheat flour
1 tsp cinnamon
1/2 tsp baking powder
1/8 tsp nutmeg
1/8 tsp salt
1/4 cup unsweetened applesauce (should have been 3/4 cup)
1/3 cup NuNaturals Stevia Baking Blend
1 flax egg
2 tsp vanilla
1/2 apple, finely diced

Directions:
Preheat oven to 275

In a large bowl, combine oatmeal, flour, cinnamon, baking powder, nutmeg, and salt.

In another bowl, whisk applesauce, NuNaturals Stevia Baking Blend, flax egg, and vanilla. Pour over oatmeal mixture and stir to combine. Add chopped apple and stir.

Bake on prepared cookie sheet for about 25 minutes.

Mine did not spread out at all, so they cooked just as I had put them on the tray, sort of rounded. Next time I will flatten them out more and will use more applesauce. They only made 18 small cookies so be forewarned that you will want to make more! Oh, and the stats according to the original recipe were 48 calories per cookie. Not sure if any of my changes made much of a difference. Either way, these babies are good!

  5. I'm so jealous of your party, I'm totally doing nothing special tomorrow. Those cookies look like they wouldn't last an second around me! PS, my roommate just had ALL her money from her bank account hacked drained and I thought of you and that spain shopping spree! maybe it was the same dude!

  11. love the cookie recipe! and you know you could likely grind up oats for oat flour, skip the other flour, and they would be GF and vegan. NIce. I may try that :) And the flax egg. perfect.

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
