Plan B - Rest Day
Well, let me just say this, those hill repeats seriously kicked my ass (and quads). Yowzers. My legs feel like lead today. I feel like I did nothing but a million squats yesterday. All good though. It just meant that today was my rest day rather than tomorrow. I can bend a little, especially when there was no way I was doing anything that involved working my legs ;-)

Oddly enough, however, I woke up wide-eyed (not exactly bushy-tailed) at 5:26, which is when I have been getting up to go run. Apparently my brain missed the "rest day" memo. Do you ever have those days when you know it is going to be a mandatory rest day, but part of your body or mind is still thinking you should be working out? Maybe it's just because it's habit.

I have to say, when I don't post a workout, I feel like my posts are insanely short. But, short isn't always a bad thing right? Better than unnecessary rambling (which I'm beginning to do).

Plan B - Quorn Picatta
I thought I was going to make fajitas for dinner. I thought that would be super fast, super easy, and veggie filled. I realized that I was out of any protein for the fajitas or even mushrooms to pretend. What stinks is that we went to Whole Foods at lunch. I was going to pick up some tempeh, but they were out of all but the plain, which I don't care for as much. Figures right? Jason had mentioned making Quorn Picatta using Quorn cutlet. This is a dish that he typically makes, but I figured I could pull it off...surely. The last time we made it, I just listed the ingredients, but this time I thought I would actually give it to you as a real recipe:

Quorn Picatta
Ingredients:
2-3 tbsp capers
1/4 red onion, finely diced
2-3 cloves garlic, minced
1/2 cup white wine
juice of half of 1 lemon
To taste: fresh ground black pepper, parsley
Optional: salt, pat of butter

Directions:
Saute red onions, garlic, capers, and white wine until onions are very soft and sauced starts to cook down and thicken. Stir in the parsley and lemon juice and season with salt and pepper if desired.

Optional: stir in small amount of butter to loosen up the sauce (I like mine without the butter). We've never tried using a vegan butter, but this might be a good option.

I served this with Smashed Cauliflower and Sauteed Green Beans, Red Bell Peppers, and Onions.



If you are a fan of capers, then I think you'd like this sauce. It would be good with other proteins like a grilled or baked tofu as well.

  2. thus why I hate rest days...I usually WANT to work out :) That's why I struggle with it and would rather take a rest day when I NEED it and can't bear to wake up and get 'er done. But I know, I need to, so I commend you for sticking to it :)

  4. I did hill repeats yesterday too and and glutes and quads are SORE too. A good sore though.
    I love this recipe. It looks simple, clean, and delicious.

  5. I haven't tried Quorn yet, but I saw it in the freezer section yesterday.- this recipe looks like a great way to incorporate it.
    Glad you got to take a rest day, even though the brain thought otherwise. :)

    I am not a caper fan but your red pepper, green bean and onion mix looks devine!

    I wish we had quorn cutlets here - they aren't available! I've never tried capers, I'm actually not entirely sure what they are - off to google!

  9. I LOVE QUORN! they are actually from england and I go to england at least once a year and I totally go bananas and buy them in every variety! I get the fajitas, meatballs, shepard's pie, everything! Your legs must be in awesome shape!

  10. Mmmmm...I LOVE capers! I haven't had those quorn cutlets in a long time, but I used to love them as well! I think I kind of ate too many of them and got sick of them, but it's time for a comeback!

    Diana @ The Chic Life Quorn is a non-soy product. The packaging is orange and typically found with the organic frozen foods or other veggie stuff like Amy's products.

    Sarah @ Run Sarah Oh sorry you can't get Quorn products there. That really stinks. Capers have a rather salty/briny flavor. When you cook with them, you definitely don't need to add salt to the meal.

    Eden's Eats I'm glad they are starting to carry more of the varieties here, not just the cutlets or nuggets. I would most definitely go bananas with new products that we don't get here!

  12. I feel the same way about "off" days...they are bitter-sweet! The rest is good but it makes me feel lazy. Keeping busy and incorporating some active fun helps me deal with it a bit. ;-)

  13. I take Sunday off every week and I love it. I never feel guilty about it. I work hard Monday-Saturday and then Sunday I sleep in, put my feet up and CHILL! :)

  14. Ahh a good pain I'm sure:) Always odd when you walk like you just got off a horse for a day or two.

    I am having a rest day today, but secretly I'm plotting my evening workout. My calves are barking but I can't help it, I have to move:)

    TOTALLY hear you on your body wanting to workout even on a rest day - that's EXACTLY how I felt in Maine on Sunday when we took a rest day. I sooo wanted to run but Scott forced me to stick to the rest. ;)

    ive noticed for me that the summer makes my legs so much MORE sore. so after i do any weights or intense muscle workouts.. i not only have sore muscles.. they have that same heavy lead feeling :(

  17. ive never heard of that recipe before but it sounds great! love the saltiness of capers and I think they'd be complimented by the white wine and garlic!

  19. Joanna Sutter @ Fitness & Spice Active fun is probably a good idea for me on rest days. Getting out for a walk would still count as rest right? Just no power walking. I should try yoga on rest days...

    Kelly @ Healthy Living with Kelly I usually don't feel the urge to exercise on my scheduled day off - I shoot for Friday. It's when I have to take an unplanned rest day and my schedule is out of whack LOL. I love that you enjoy your rest days too!

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Well, it was really only a few streets over different, but still. The point is we took a different street. Sometimes that's good, sometimes not. I did realize th

Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
