Tempeh, Baseball & If You Really Knew Me (Fun Facts Friday)

I thought dinner was going to be fairly simple. However, in true Heather fashion the plan for a simple wrap with a garlic hummus turned into Poached Tempeh Sandwiches with baked sweet potato "fries." So much for fast, easy, simple huh?

I threw together a super fast, simple garlic hummus and decided to try poaching tempeh in 1 cup of water with 1 low-sodium vegetable bouillon cube for flavor. I was hoping that this method would add more flavor to the tempeh. I poached on one side for about 10 minutes and then flipped and continued to cook until liquid was gone (another 8-10 minutes). I then placed the tempeh slices on a cookie sheet and baked for 10 minutes on each side at 425 degrees (with the potatoes).

I smeared sandwich thins with the garlic hummus and stacked the tempeh with spinach, roasted red bell peppers, and Follow Your Heart Vegan Monterey Jack. I put the sandwiches back in the oven just to melt the "cheese."

The poaching didn't add as much flavor as I had hoped, but I will try again with a stronger flavored broth. Other than that, the sandwiches were really good. I must make a note, however, that we did not care for this vegan cheese nearly as much as we have liked the Soy Kaas brand. It got super crumbly after it melted then started to cool.

The game last night was, well, hot. It was hot, sticky, sweaty and the team was getting their butts served to them on a platter. It was oddly packed though. But then we realized it was Clunker Car Night. Funny how people show up in the heat to try to win a POS car. It did clear out fairly early though. In fact we did the same. We stayed until the bottom of the 6th inning then called it quits. I think we may have each lost a couple of pounds from sweating ;-)

Sorry for not taking any cute pics of me and the hubs, but I didn't think you'd need to see sweaty faces. I do promise to take pictures tonight though.

Fun Facts Friday - If You Really Knew Me
Today is my rest day. My legs are thanking me. For some reason they have been super sore lately. Guess those 2-a-week leg days are getting to me. Hopefully that means they're working too!

So moving right along to Fun Facts Friday. A few weeks ago Lisa @ I'm an Okie did a post that I really enjoyed. It was called "If You Really Knew Me." While these won't all be "fun" in terms of LOL, I think it will still be fun to do and I hope to learn something new about you too.

If you really knew me, you'd know...
  • That I am fiercely loyal and protective of family and friends.
  • That I have been hit by a baseball twice at 2 different games - one line drive into arm and one bounced first before hitting my leg.
  • That I have a cherry birthmark on my left wrist. It has faded but still gets bright red when I'm hot or cold.
  • That I am very sensitive, thus often very emotional. Yet I can still be oddly stoic. You will rarely see me jumping up and down with joy or excitement though I feel it.
  • That I am stubborn and head strong.
  • That I miss ballet terribly but it simply doesn't fit into life for me right now.
  • That even as happy as I might be, I sometimes can get suddenly, teary-eyed, sad and blue for no reason at all.
  • That I cannot imagine my life without my husband.
  • That no matter how insane my dogs may be, I wouldn't trade them for the world.

So, if I really knew YOU, what would I know?

  1. These are awesome! I get teary eyed when I get really happy. When my kids are in a play or in a band concert...whatever it is, I get huge tears in my eyes. I too could not imagine my life without my husband (or kids)! I am the worst procrastinator...it is a sickness. I am sure the list could go on and on. Have a great time tonight!     I can see the stoic but passionate thing in you. I really like that about you too. And what you have with baseballs I have with basketballs. I've been hit by one too many at games. I'm sure a baseball would hurt much worse though!

  3. I loved the tempeh idea. Needless to say I can't make a simple dinner either. There is definitely a mentally block on that for me.

    Hmmm.... don't you know about me? That is really tough since you know a lot. We share many of the same traits. I am stubborn, fiercely loyal, sensitive (but don't show it), and can't imagine life without my hubby or fur babies. Also I am definitely a perfectionist (to a fault) and I always expect life to be fair and people to be good even though that doesn't usually pan out.

The stoic but passionate thing about you - THAT is one thing I didn't "get" until I met you and even in the midst of our RT fun together, I still didn't really "get" what that thing was about you until you just explained it here and NOW it makes total sense!! Ok...so one thing about me that you'd know if you really knew me? That I may appear pretty confident but I hide an inner self-doubt about things sometimes...goes with the "fake it until you make it" saying...

Hmmm....I care about my body, but sometimes, I dont give a you know what.....I sometimes want to cry when I see hurt animals, but not hurt humans......Sometimes, I really dont feel like doing yoga even though I'm an instructor....I want to write a book.....even though I had an eating disorder (and I guess still mildly have one) sometimes I just want shove sandwiches down too skinny girls' throats (but I'm not violent, I swear).

  17. I always love getting to know more about people! I hiccup really loudly a couple times a day and I have for about 4 years now. I've been to the doctor for it and as far as they can tell, nothing is wrong! I just get to be really embarrassed a couple times a day...

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
