BBQ Seitan & Portobello Burritos on a Rest Day

Sunday Salad Night Last night we ended up going the grilling route for dinner. I had lots of fresh veggies on hand since I just went to the grocery store. So I grilled veggies (squash, zucchini, sweet potato, red and green bell peppers) and tempeh for a tasty Grilled Tempeh & Veggies Salad .   I love these grilled salads because you can use whatever veggie you like and protein source as well. It would have been just as good with grilled tofu or even your favorite bean. Monday oh Monday Today started off swimmingly. Definitely a Monday. I got to work and realized I didn't have my badge to get into my office. As a reminder, I get to work at 7am. Not many people are around that early. I had to sit and wait until another co-worker showed up. Happy Monday! Needless to say, it was just one of "those" days. I had no energy or desire to get in a workout either. Running: Errands, Miles, and then Nowhere

Running Errands Last night I was sound asleep before 9:30 pm. I had to get up around 5:50 to take the maniacs downstairs - Maddie thinks getting up automatically = food. Um, not so much. Made them go out and potty then left them in the kitchen so I could sleep peacefully for a bit longer. I got up a little before 8, so nice long sleep for me. After breakfast, I decided to go ahead and run my errands early. I needed to go by Target and the grocery store. The morning was a little cool, so I thought I could run the errands and let it warm up a little bit before I headed out for my run. It was kind of nice running errands early on a Sunday, both stores were empty. However, neither cashier was speedy. Guess you can't win them all. On my way to Target, I saw a sight that has been haunting me all day. I absolutely cannot get it out of my head. We have a bypass that runs through the city. It's 6 lanes with speed limit of 60 (meaning 70 for most people). I was just zipping along ...

What Happened Last Night? This morning I woke up first at 6:20 when Maddie decided she wanted out of her kennel and to be downstairs. The second time was 8:09 when Heath decided he wanted out of his kennel and downstairs to eat. I won't like, I would like to (needed to) have slept another two hours. It was a little slow going after last night. Sign of a good party would be my first tweet of the day:  I'm thinking there is a bird in the house...what the hell happened last night??? Yep, found bird poop where bird poop most definitely should not be. Still have not found said bird however. It should go without saying that last night was a total blast. It was so fun having everyone just be relaxed and comfy in jammies. I am not known for letting loose often, but I definitely went with it last night. Fun Facts Friday - Sleepover Party Memories

TGIF After Stormy Night I cannot even begin to express how thankful I am that this is a rest day. We had some deadly storms roll through the state last night. Sadly, seven people died. Heath absolutely turns himself inside out during storms. He usually starts pacing or if it's in the middle of the night and he's in his kennel banging the kennel door. So, we were abruptly woken up at 1:30 am. No storms just yet, but we knew they were coming. Jason ended up taking Heath downstairs. The benadryl wasn't working. Jason read that sometimes if a dog can scootch up to a toilet or get into a cast iron tub, that can help. So, Jason got on the couch and left he bathroom door open for the terrified Heath Man. Around 2 am the tornado sirens started going off. I got up to go check the radar. Right about that time the hail started. In the two months I've had my car, we have now had two hail storms. Gym day & Grilled Tofu Sandwiches

Gym Day Today I hit the gym for another upper body workout. I did supersets of 3x8, starting with the elliptical for 10 minutes. Pushups for warm up - 24 SS#1 Incline bicep curls Underhand barbell rows SS#2 Double-arm overhead triceps extension Standing dumbbell shoulder press SS#3 Staggered flat bench dumbbell chest press (start at top, pause halfway down, pause all the way down, pause halfway up, then all the way up = 1 rep) Rear delt flyes I did some ab work then another 10 on the elliptical. I had a pretty good weight workout. However, the weight area was super crowded today. Sometimes I'm amazed at people's lack of personal space. Busy Busy Tofu Thursday Tomorrow will most definitely be a rest day. I've actually gone over on my days worked in a row. I don't feel fatigued, like not desperate for a rest day, but I know it's time. Glad to be back on my Friday rest day schedule. I have something fun planned for tomorrow night. Of course, that ...

Sweat-tastic Spin & Dinner Made For Me

Sweat-tastic Spin This morning I packed my gym bag for both a run or for a spin class. I had thought seriously about getting in another run after work. But honestly, my legs were kind of tired and the temps were climbing. I ended up going with spin - like that's easier on the legs somehow. I guess I'm just a serious glutton for punishment. Holy freaking sweaty mess. Yikes. I don't know if it was just the Group Ride track being used today or the fact that it was already warm in the gym (or both), but I think I sweated less running in the humid 85-degree weather on Saturday than at spin today. There was track when I seriously wanted to curse (and rejoice) out loud when the interval was over. I will say that the one HUGE issue I have with my gym is the lack of fans. I hear people complain about it, but for whatever reason, no fans ever seem to make an appearance. The way it's set up, the vents are all in the perimeters in the ceilings - the perimeters are mostly windo...

Redeeming Run & Grilling Out

Redeeming Run Today turned out to be an absolutely gorgeous, sunny day. For a change we didn't have winds gusting hard enough to nudge you over just standing. Of course this meant a run. I just couldn't pass up the opportunity. I will admit that I was honestly nervous about running today. Saturday's windy, humid, hot run kind of scarred me a bit. I know it's a little silly, but if you run and have had a bad one, then you know how it goes. Thankfully, I had a redeeming 6.5 mile run. It was a little warm, but the breeze was just about perfect. It was a little strong on the return, but I was getting pretty warm and didn't mind at that point.  I got home, stretched and rolled on my Triggerpoint Therapy Kit .
